On my recently purchased 2005, the steering seems stiff and after I go around corners it doesn't straighten up by itself. Is this common on a C6 or do I have a problem?
The steering system was re-designed for MY 2008 and later; more precise and lighter.
But we had a 2006 for several years, steering should be like yours and it wasn't bad at all.
Centering on our previous 2006 and now the 2009 does seem a little weak to me, but that's just the way it's designed.
Does your car have stock size wheels and tires?
Properly inflated to 30 psi cold?
Alignment normal? A quick check would be to measure the tread with a tread depth gauge, or at least eyeball the front tires to see if they are wearing evenly. Or get an alignment to be sure. Lots of opinions on what settings, .5 negative camber front & rear, 0 toe front & rear; is a good start.
Of course, I'm presuming your PS reservoir is full and nothing in the system looks incorrect.

I've never known a Corvette wheel that DID go back to center after going around a corner. Even back to my 1978 Vette, I can take my hands off of the wheel in the middle of a sharp turn and the wheel stays right there.

Stock wheels and tires, even wear with 30 psi. The PS res. is full. I feel the steering is probably OK, it just feels stiffer than the older vettes I have driven. However, It does feel good out on the road.
If you can find someone with another 05 to drive, that would be the best way to determine if there is a problem with yours. I think we all have a slightly different idea of free, stiff, tight, loose, etc.
