What are you looking to compare them by? The horsepower difference is not enough to spend that kind of money on IMO. The only 2 reason I can think of doing it are road course performance ( if you do a lot of trackdays or autoX ) , and/or looks.
Also remember the GS more expensive tires that wear out a lot quicker.

Looking for performance wise. I can get 2lt GS for under 50k otd.
Or should i look at used Z06
Must be a good reason why people are trading their older Z51's for newer Grand Sports, but people are not trading their newer Grand Sports for older Z51s.
Depends who you ask, those that have one will tell u one story and those that don't will tell u another. I've had an 02 Z06, 06 C6 vert, an 09 C6 vert (Z51s) and now a 12 GS. My 02 Z seemed to be the funest to drive but all around looks/performance/feel etc. my GS is the best. But that's just me

When I purchased my '12 1LT coupe this weekend I also looked at a centennial eddition GS with all the fixins.
If you simply must have the look, the GS is an option package. They are beautiful cars. However after driving both it was clear that the value for dollar just wasn't there with the GS. Especially the one on the lot that MSRP'd for just over $70,000.
After owning a z06, the major flaw with the GS is simply the fact that it isn't. They added all the goodies from the Z06 like big wheels, breaks, fenders etc. but provided the standard engine and without any of the weight savings realized by the carbon body pieces and aluminum frame. The result is a car that doesn't perform as it should IMHO.
Beautiful car no doubt, but at the price some of these GS's are pulling, spend the little bit extra and go straight to the Z06.
If I was in your shoes, I'd keep the 07 and put a bit of money in to it. You can always change the body pieces and add wheels yourself.
