When the GS first came out, someone posted that it had the same alignment specs as the Z06. That would be logical since both cars have the same size tires and very similar suspensions. Hopefully, someone with a 2010 or later Service Manual will post the official numers for the GS.
Whether you actually want those numbers is another story, but we can't really fault the shop for setting OP's alignment well within the range. If indeed the GS = Z06, for alignment.
Toe-out is indeed a tire killer, especially when combined with the negative camber most people have/want on their Corvette. It also makes the car very "twitchy".
The widely-quoted Pfadt Street alignment numbers allow/recommend a bit of toe-in both front and rear, and that made my Z51 much more "stable" compared to 0 toe. Cornering does not seem to have suffered.
