You can, you'll just need to index windows (turn car on to acc, roll up windows, hold button for 3 seconds in up position, done)
Popular opinion is to use a tender. I use a $19 tender from black&decker that is in every way similar to the Batterytender except in price
Of course, the alarm system will not work with the battery disconnected.
And absolutely make sure your metal key will open the hatch/trunk... to access the pull-tab that manually opens the driver's door, so you can open hood.
Yes, you can leave the hood unlatched. But you'll still want to test the key, in case a well-meaning visitor closes the hood.
I covered the keyhole with painter's tape to keep it from getting jammed with road dust/oil/moisture.
