I use leftovers all the time and all of my OA results have not suggested it as a problem, it is not hydroscopic like brake fluid and if not in use would have no reason to be contaminated by condensation, etc.
I just did a break-in change for my differential and transmission and usually switch everything over to Amsoil but they did not have a recommended fluid for the differential so I stuck with the Dexron LS Gear Oil- ordered over the web and delivered in a few days. For the OP, I'd use the leftover. Really no difference it sitting in a bottle for a year than in someones diff for a year. The diff has a vent plug on it so it is not a sealed unit.
