I have a chance to trade my 2000 coupe, my ZX10R and some cash for a 2007 Z51. Only thing that i'm not sure on is it has a 6 speed paddle shifter, i'd much rather have a 6 speed stick but I've never driven a flappy paddle before. Are these very fun to drive and what are the down sides to flappy paddles? reliablity maybe? Also are there any major problems common with a 07?

Fun is very subjective and personal with transmissions.
If you are used to a manual trans and have never driven an auto trans Vette, with or without paddles, I strongly urge you to try one or two before you spend your money.
The A6 trans is very reliable but some units do occasionally have problems. It can get expensive to repair.
Just be aware that there were significant upgrades done to the A6 in '08, more in '10 and '12. They work much better since the 2012 upgrades. I have an '08 with A6. It's fine but not impressive and, from MY perspective, definitely NOT as much fun or engaging as a manual trans. (JMO of course) Many here will agree, many will disagree. Like I said, very subjective.
Try before you buy. I wouldn't buy a pre-'08 A6 but that's me.

Yeah. So anyway. Back on planet earth, 30-36 hp is easy to come by. The t6060 transmission, on the other hand, on '08+ is amazing I'm told. May be worth considering.
Haven't regretted my '07 6m Z51 for one second. Planning to daily drive it? Auto may make sense. Weekend toy? Hold out for a 6m if that's what you prefer. I'd never have an auto sports car, but I put only a couple hundred miles a month on mine.
I traded my '01 MN6 for an "07 A6 with the Z51 package. My intent was to get an '08 or newer for the LS3, but after drive both and '08 Jet stream b Blue MN6 and the "07 Monterey Red Metallic A6 I opted for the "07.
I true found not difference in the performance of the two based on the LS2 & LS3 but the "08 had 25K miles and the "07 had 11K, plus it was a 3LT with Nav. All my previous Corvette have been manual transmission cars, but I decided that in the area I live the traffic can be very bad and I was simply tired of the constant shifting. It did not take me a long time to transition from manual to auto and when I am in the mood, I simply drop it in to Sports mode and play. If you do end up with the A6, I suggest that you get it tuned so the shift points are quick and precise.
The main thing is, buy what you are most comfortable with that has the options you would like and has the lowest mileage.
Find an 08 or newer. Unless you get yourself in a Z06. Then you can look at the 06's and up. Only difference is the 08 Z's came with a TR6060 and some very minor changes. The 12's came with better interior.
I would not do it, try and find an 2008 or later model many improvements over the 07 and earlier ones. As for the paddle shifter it is a fancy slush box that you can pretend you are working the gears.
