So I was under my car today looking at the radiator shroud getting an idea of where I'm going to cut the hole and I noticed that there is a cooler for something between the fans and the engine and there was a P/S hose or something wedged up against it bending some of the fins. I used a couple of wire ties to pull it away. I'm wondering what is it cooling my car is an 08 Z51 A6, I'm thinking oil cooler?

Have no idea, thought someone here would know, it's stock. Everything is so tight in there lol I guess I'll have to see where the lines go today.
Yep that's what it is , Power steering cooler. Now why does this car need a power steering cooler? I've had many "Muscle Cars" in my life and never had a need to cool the power steering fluid.

Maybe; Big sticky tires with 1600 pounds weight on them turned by a small steering wheel with lots of power assist?

For every day street driving you don't. Z51 is aimed at autocross/track use. Go ask a bunch of 4th gen F-body guys about the power steering pumps they burned up because of no cooler.

I just replaced the power steering pump in my 1998 Camaro Z28 this summer 319,000 miles on it and the cheap thing just wore out.

I can attest to this... on two different Z28's. The fluid would superheat and cause the threads on the main hose to become loose. I learned to carry an adjustable wrench with me on race nights, after several experiences of people thinking my car was on fire because every time I turned the wheel, power steering fluid would spray onto my headers, causing massive plumes of smoke. Power Steering fluid does polish up the engine bay nicely though.
