So, we leave church today and run the AC on the way to lunch, all is good. Come out after lunch, start the car, I notice that it isn't cooling off in the car. The air is only blowing out the defrost vents. I tried turning it off, no difference. The display shows me making changes, but nothing changes. The fan blows one speed, auto turns off and on, shows me selecting different vents, tepmps change, etc. Not sure how all this is controled in the vette. Any ideas?
More seriously, the panel with your climate controls may be going bad. They cost a few hundred bucks but not exorbitant and not too tough to replace or have replaced.
There are also some rubber-like screens buried up under the dash that control where the air comes out, replacing them is big bucks for labor because the whole dash needs to come out. Many people replace all of them when one fails, because of the dash removal expense. But if your fan is stuck on just one speed, that implies something in the control panel.
You could start by finding and pulling the appropriate fuse(s) for a minute, then reinstall. Your wallet could get lucky.

I was kind of thinking the same thing. I will try the fuses when I get off work today.

The controller controls everything. If nothing is working it's the controller and not all the controlled pieces failing at once. Pulling the fuse resets the microprocessor (computer) in the controller but it is supposed to reset itself when the car is off. When it doesn't there is a reason.
I had this happen in my Yukon. It has a head unit where it controls the front and rear a/c units. The rear would cool but not the front. There is a specific part of the head unit that failed. Can't remember the name.
