Don't hold me to this but IIRC, all the GS models (coupes and verts) are essentially a Z51-optioned wide body.
When the Grand Sports were introduced, they became the Z51 option. In other words, 2010 and up Z51's are automatically Grand Sports or vice versa. The high performance option on a Grand Sport is the Z16 option. However, only M6 equipped coupes got the Wixom built forged crank motor and dry sump oiling. See below:

Yes, as others have stated, the Z51 option was available only on 2005-2009 Base and Base Convertible models. "Z51" was an option package, and never a model, similar to how the glass roof or chrome wheels are options. The Z51 option package was quite a performance bargain for what was included.
The "Grand Sport" was an actual model, not an option, similar to how the Z06 and ZR1 are models, not options. GS did incorporate *most* of the Z51 option's content, and the "Z51" code even appears on the GS build sheet, but not *all* the old Z51 content was included (for example, the GS doesn't use the Z51 option's rear sway bar, as it is superseded by a GS-spec rear sway bar).
Corvette models (in order of introduction):
*Base (2005-2013)
*Base Convertible (2005-2013)
*Z06 (2006-2013)
*ZR1 (2009-2013)
*Grand Sport (2010-2013)
*Grand Sport Convertible (2010-2013)
*427 Convertible (2013)
So you could say that the Z51 option was *optional and available* only on 2005-2009 Base and Base Convertible models, but was *standard* on all Grand Sport models. (that is I *think* it was standard on the GS vert... I'll have to look that up to be sure!)
