190 to 210 is common at speed, higher at idle in traffic.
LS3 I see 189-203 (180 degree stat) coolant covering 99% of situations, moving or not. The oil once heated can be from 215-235. This is street driving.

We had a 2006 LS2 and now a 2009 LS3, the temps are indeed almost identical.
With the stock 190'F thermostat, coolant runs 192-220 depending on driving condition, has never gone above 225 even in heavy traffic on a hot day.
Oil can take a loooong time to warm up, but eventually settles out 215-235 just like Boomer said. Typical on the interstates would be 215-225. If you start running high power and rpm in the twisties, oil can get to 250 rather quickly.
Our retired oil company engineer says best oil temp is 190-250, but reading the manual indicates GM doesn't think anything up to 302 is a problem.

Pure synth can go that high. Natural should not. Your numbers are right for both.
