Body shop jail. It seems that a lot of people who build cars or have had projects have been thru this. I would move toward getting the car out of there too as others have suggested and find a specialty shop. I now use a guy who has a small shop so he can only have 4-5 cars there at a time so when he gets a car he wants to get going on it so he can get it out and something else in. It never hurts to go to local car shows and cruises and talk with people and find out about small independent shops that will work with you and your schedule.
Why in the world would they take it all apart before actually having the replacement parts right there in the shop? I would demand it to be put back the way it was when it was dropped of and get it the hell out of there.
They take it apart to hold you hostage. They will tell you that we need to see if there is other damage on a normal collision. Run forest run!

I had a shop that specialized in Corvettes and based on what you have said know that the one you have your car in is stroking you, been there and have had it done to me, there is more than likely problems with the management that you do not see or know about.

I actually had this happen to me even at a so called Corvette Shop in Dallas, so you have to be careful. I had some fairly critical engine work that needed addressing and left the car with them. After a week, they had not yet had time to diagnose, so I said adios!
Ended up dropping in a new crate engine, so to bad for them! I won't name names.
