Newbie here. What's it like to live with a splitter and skirts on a C6? Is it constant paranoia about hitting the slightest bump and damaging them? Or is it manageable caution?
I'm looking at a C6 that already has them installed.
I have the ZR1 style splitter and side skirts on my base c6, lowered all the way down on stock bolts. No problems yet other than the splitter getting chipped by road debris kicked up by other vehicles. The roads are also hot garbage here in Texas. I do have to be careful how I approach things, but it is not that bad.
The side skirts don't reduce the clearance much if any. The splitter doesn't really either but they sure stick out there where they get whacked, and extend the front of the car another couple inches. I've never drug the skirts but rub the splitter fairly often, that's why I keep the stock GS one on there.

You mentioned that your car is 'lowered on stock bolts'. I'm new to Corvettes and C6s, is there a built in height adjustment on the stock suspension? (The one I'm looking at has the magnetic adjust, I know this doesn't adjust height.)

Yes, you can adjust the height on the stock suspension with the turn of a bolt (literally).
I don't know much about the magnetic suspension to be honest. I looked at my boss's ZR1 a few months back and his had the same height adjustment bolts that my base c6 has so I am assuming you can adjust the height the same, but that is a guess.
If you do lower the car, make sure to get an alignment done. Some will tell you it's not necessary with the stock bolts but mine was out of specs a good bit after lowering it.

It would be cool if there was a powered way to make the adjustment. That way when you came up on an obstruction you could press a button, get past it then return to the lowered position. Not the silly jumping hydraulic cars you see, just enough to raise the car an inch or so just to get in and out of a driveway, or over a speed bump, etc.
Is there a video somewhere on how to make this adjustment?

I bought my '11 GS used and it had the ZR1 style splitter and side skirts. Less that 20 miles down the road from purchase I was unable to dodge a small piece of 4x4. It took a bite out of the splitter. I now have the stock GS splitter.
As for the side skirts, I have not noticed any interference on speed bumps.

I dd my C6 and it has a front splitter and side skirts. When I first purchased in 2014, I lowered it all the way on stock bolts. Front was low.. but "perfect" for what I wanted. When I added the splitter, I raised the front "half way" to help prevent scrapping.
It's not been bad, but you need to pay attention to driveways, and parking spots, etc..
My splitter was doing just fine till I hammered a #@Q skunk at 75 MPH. Now I need to replace the front splitter. And will do soon.
I have a 12 GS that I've added CF front spoiler, skirts, and rear diffuser. All is good but the damn from spoiler is a pain. and i wasn't relaxed until I finally cracked it. Sides and rear are perfect. At this point, I don't need to replace the front but I'm not sure what I'd do OE vs ZR1.
Love looks of the ZR1 but it's an expensive piece.
As Vet with a Vette said, it's very unlikely you'll have any issues with the side skirts. If you do hit them, I'd start looking for other damage under the car. For the front skirt, you can either brave it with a normal front splitter or if you're really concerned about scraping and damage/breakage, I think scrape armor's (site vendor) front bumper protector also sticks out slightly in the front giving a bit of a "splitter look" while simultaneously protecting your front bumper/fascia from scrape damage.
Edit: Reread your post and remembered you are looking at car that already has them. I'd say go for it. If you have problems with that front splitter, you can always remove it or go for the scrape armor option I mentioned. Enjoy!!!
