Just purchased a 2007 Corvette coupe with 25000 from a Chevrolet Dealer. Love the car! Only fluid change I'm sure of is oil. Car is 10 years old. Should I change transmission fluid, brake fluid, power steering fluid, coolant? Should the Chevrolet dealer
be able to get this information from computer?

Yes it is an automatic. Drove vehicle home (85 miles) no problem. I will contact the salesman today and see about a VIS report. I like to keep my vehicles well maintained.
Agree with Rose...brake fluid and coolant both age poorly, and can become weak over years, even without miles. Oil is cheap, so I would do that just for my own peace of mind.
On street driven cars (as opposed to track only race cars), I change brake fluid every 2 or 3 years, and coolant every 5 years.
A 2007 should be getting its second coolant change by now, and it's 4th or 5th brake fluid change.
Both those fluids are often neglected and rarely changed when they should be. Especially the brake fluid. Also, be sure to cap the brake bleeders with rubber caps after flushing/bleeding the brakes. Seized bleeders are almost always the result of uncapped bleeders getting filled with water (possibly contaminated with road chemicals). I've never seen a capped bleeder seize up in over 30 years of working on cars. I've seen lots of seized bleeders, though, without caps.
Dealer ran the report. Report indicated that a starter was replaced but it shows nothing regarding fluid changes. Could have been changed at non-dealer location?
Fluids look fine but to be on safe side and get car at a base point, I am going to change Coolant, Brake Fluid as recommended above.
Transmission fluid has 10 years and 25,000 miles on it. Does it not lose viscosity / etc. like other oils?
Motor oil and filter has been changed regularly and was changed by dealer prior to my purchase Saturday. Oil looks, smells, feels like it was changed.
Read the OM. Auto transmission fluid goes 100k miles. Doesn't say anything about time. If you want to change it now, go ahead. I myself wouldn't do it.
As others have said brake and coolant should be ready for a change. Too soon for transmission fluid change. Good luck and welcome to the Forum---Remember to WAVE!
About the oil change. If the "Chevrolet dealership" has a lot of corvettes and some "corvette specialists" in the service department, it's very likely it got the correct oil (Mobil One full synthetic preferred, full synthetic absolutely required).
The Oil Life monitor on your 2007 model is really tuned to full synthetic. I'd never put anything other than Mobil One in a Corvette engine, that's what the factory puts in, and it's the best oil for that engine. One thing about the early C6 oil life monitor (this includes your 2007 model), it doesn't count down for the calendar. After 12 months, you need to change the oil, no matter what the "oil life remaining" says on the computer display.
If you aren't 100% sure they put full synthetic in it, change it within 3 months/3,000 miles with Mobil One and a good filter and reset the oil life on the dash display.

I am not sure what they put in it as they do not appear to be Corvette specialist. I will ask my salesman to check for me but I agree it says Mobil 1 on fill cap so that is what it needs.
I have used Mobil 1 Extended Oil on all my cars with good results with a Mobil 1 Extended Oil Filter.
Is there a poll / survey / etc. showing what oil / filter people use? I know on the Harley forum this gets kicked around a lot. My bike uses Mobil 1 V Twin oil. My Ford Taurus went 250,000 on the oil. I have had good luck with it.
