What`s the normal running engine temp range for a 2012 stock 430hp coupe w/manual trans.. Is the usual over 200 engine temp normal..

That varies greatly depending on the type of driving you are doing. Stop and go traffic to open freeway driving lately with air temps in the high 90's has my car running between 198 and 215.

Average Coolant ranges on stock C6:
192*F - 205*F at speeds above 40mph.
205*F - 225*F at speeds below 40 mph.
Ambient temps above 95*F+:
Below 40 mph can creep up to 230*+F.
Above 40 mph can creep up to 210*+F.
At low speeds coolant temps depend on ambient temps and the amount of air flow through the radiator by the ECM varying fan speed. At higher speeds air flow through the radiator is sufficient and the fan is off. However, higher ambient temps will increase coolant temps. As long as you are within the average range, it is considered normal.

My totally stock 2013 M6; water temp 192 to 198, oil 214 to 219, at 80 mph on cruise control. It has been that way for the 35K I have owned it, since it was new. I am the only owner.

I've had mine '09 since 01/2017. until just about month ago, it would run all day at freeway speeds, around 193°-198°.
maybe 205°-210° around town. I have seen it up to 230° when stopped in traffic ( 90°-100° ambient temp ).
the water pump started chirping and leaking., after I had it replace, the temps now seem to run about 5° hotter.
had the shop bleed the coolant system twice.
it will occasionally run around in mid 190°'s.
yesterday, while doing an 85mph freeway run, I actually show it running @ 190°!
regardless, if with running a bit hotter then usual, it seems to with the range others are seeing.

The fan table can be modified by a tune if you want the fan to come on sooner, but at the risk of stressing the fan connector (I recall some posts about the connector melting).

To put water temperature in perspective, water boiling point is 212F, at 15 psi (radiator cap) that boiling point is increased to 249.8F. A 50/50 mix of water and antifreeze will add 11F buffer to those number so in reality when a car pukes (overheats) out the overflow the water temp is 260F or higher.
