How much fluid does the power steering system hold. (2013 GS 26,000 miles. I've changed it 3 times now in the past 130 miles (like using the ranger method on the clutch fluid) and what I syphon out is still dirty. I get about 8 ounces out of the reservoir each time and refill with 8 ounces of new (clear) power steering fluid. I drive it about 50 to 100 miles between changes.
I am not sure of "dry" refill capacity.
Getting all the old oil out of the lines and rack I'd say would be a pain in the a**.
Removal of the reservoir is also not so quick and easy.
You technique of syphon, refilling, driving, syphon, refill multiple times seems like a winner, just keep on doing so until mission accomplished.
Good luck.
I haven't done it on the Vette, but I've removed a hose off the rack on plenty of other vehicles and drained everything that way. It only takes a couple of drains a few days apart to get clean fluid. Just make sure to cycle the rack several full cycles both ways after refill so that you get all the air out of the system.

I checked my factory service manual the other day for what the procedure is. It called for the power steering return hose to be disconnected and the system cycled. As a note it says that it may take 4 quarts to cycle thru the system to get clean fluid so it may take a while to get it clean using your method.
