The only reason I don't (and never will) own a C7 is I can't fit in a C7. I don't care what the specs say on paper, my C6s (especially my convertible) have always been far more roomy and comfortable. Getting into a C7 felt like trying to shoehorn myself into my wife's Miata.
I realize that this is a C6 category but if you could be unbiased as possible, which would you buy? I am undecided between a C6, 2013 60 Anniv. manual, convertible, white gray center stripe 4LT, 38k miles, 2 owner, clean car fax or a 2017 C7, 3LT, Black Rose, manual, convertible, 30k miles with 5 owners, clean car fax. I like the fact that the C6 is a 60th anniv. but I like the higher technology of the C7. Any thoughts?
My personal taste.
If the white with silver stripe C6 convertible you are considering is a Grand Sport or a 427, then I could favor the 2013 C6. If the C6 is a base model, I would definitely favor the C7 in Black Rose. I am not a fan of stripes so that is a personal ding on the C6 for me. I appreciate the traditional gauges on the C6, so C7 technology is a personal ding for me. The C7 body style is less appealing to me, but is not horrid either.
Another personal point is that the C6 is more "Passenger Friendly", something important to me because I want my wife in the passenger seat to be welcomed and participate. With our C6 GS convertible, she is easily able to adjust the climate control and radio of which she does. I enjoy her feeling a participant during our rides together.
BUT, it really comes down to personal taste which is all about what floats "YOUR" boat, not mine.

I had a C7, and even though I'm a rather small guy (hey, no short jokes, OK?) I found it difficult to get in and out of it. C6, although still very low and not as easy as my Cadillac or any other adult-appropriate car, is much better than the C7 in that respect. So thanks for that Vinnie, now I know it's not just me.

I've owned 3 Miatas and have never had trouble getting in or out of one and I'm 5' 9", 220lbs.
C6. I was in the same boat, looking hard for the right C7. Finally drove a couple and decided that I really like the C6 experience much better. More visceral. Plus I'm a sucker for analog gauges. And while I love the tech of the C7, it is sorely lacking in "modifiability" in the appearance department.

I have a C6 convertible, C7 Z06 coupe, and a C8 Z06 coupe. Of the three, the C6 has the easiest ingress/egress and the most comfortable seats. Mine is a 2006 so the technology is dated.
The C7 Z06 is my most practical of the three and is great on long road trips. Plenty of power and still gets good gas mileage.
The C8 Z06 is a beast. I have the Z07 package and it's a very stiff ride. Getting in and out is similar to a C4. You "wear" this car. Once in you are very secure in the seat and can thrash it pretty good and still stay put. Not the best long distance car but it is manageable. It is thirsty, though.
In the end, it's your dime and you are the one that has to live with your decision.
And, to complicate matters, one of the guys in my club gas a Black Rose C7 and it was good looking and unique enough to warrant a picture. I know how I’d vote, but both of your targets are not very common. Boils down to a personal choice on your part.
