There is a button right below the shifter that has a picture of the car on a winding road, what is that button. Sorry for my ignorance, I’ve just never seen one before.

IT is the Traction control on/off switch. Also puts car into competition mode.(Trac ctrl off/yaw ctrtl on)P
Is the traction control standard on the coupe or is it one of the options.
Traction control has always been standard. Active Handling was an option from '98 until 2001, when it was made standard equipment. The button on the console controls both functions. On cars that have active handling, there's an "Active Handling" label above the button.

One thing I'm sure most of you will appreciate is the fact you no longer have to hold the button to enter competition mode Just a simple tap of the button it's now a normal menu feature

Traction control has been standard since the first year of the C5. Active handling (traction control and then some) has been standard since 2001 and will be on C6.
Whats the difference between active handling and traction control....Can you turn both on and off and which ones do you want on/off for drag racing and also for track racing.
Can you turn them off while the car is moving or do you have to be stopped.

You can turn them off while moving. Traction control limiits
wheel spin. Active handling uses selective braking on individual
wheels to attempt to regain control when you have exceded the
cars limits.
Competition mode turns off traction control but leaves active
handling engaged.

Active handling is what is in the vette. It is the combination of traction control and yaw control. Yaw control is assistance for understeer or oversteer via braking in particular corner of the car to help regain control. Traction control keep the car from peeling out on aggresive acceleration. It is best at leat for me to have traction ctrl off and yaw cntrl on.(competition mode) Good, fun excitement on mullhuland drive.
P.S. I hope i got this right for this is what i thought it was since 1998.

Yep - you got it right. Active handling is your friend in an emergency maneuver, imho. A good driver will be faster through a road course with it turned off, but day-to-day driving may present some unique challenges that a road course doesn't, such as the need to perform a quick move to avoid a head-on collision.
Traction control is kind of a nuisance - especially if you're trying to get out of someone's way with a quick burst of acceleration....
