Truth be told I still have my Dynatech 1 3/4's on my set up, even had them repaired not too long ago... lots of BIG speed bumps here in Texas...
So it depends on what your looking for... do you have a methanol kit on the car? or a good F.I cam?

Honestly this has been debated for years on the forum and tests have shown over and over that gains are minimal with 1 7/8 in some cases you can lose some bottom end. I am all about going 3" all the way out the back, you get a better flow and it sounds deeper like a 427. My buddy put on 3" with Z mufflers and you would have thought it was an LS7.

I have the same set up - it does sound great. Blowers typically like more exhaust flow. Call Kooks, they will know for sure. I was asking about the stepped headers when I built my engine, but Both Kooks and AR recommended straight 1-7/8 for me on my 427ci up to 1,000whp. The Kooks were $400 less expensive when I was in the market.
