Most stock tunes do add timing but at extreme temps. I don't have my laptop here so just grabbed an image off google. Refering to the left side not the circled portion.
There is another IAT table though that enables IAT and at least on my car it wasn't enabled down there. I kept trying to add timing down low with that chart but until I adjusted the table to enabled IAT adjustments at low temps nothing happened.
That is a hard question to answer. Depends on the tune/etc. Too high for what? Car should run fine with intake temps well into the 200s if tune is good, then again they shouldn't get that high with meth.

I have a Dashlogic and set an alarm for IAT when it reaches 120. It went off today. I want to set it to a higher temp but don't want it too high to not get a warning.
OK I wanted to tripple check some stock tunes before agreeing but all stock ls3/7 tunes I checked did not add timing at cold IATs must of been on the gen3 stuff. Better safe I suppose.
I looked too, and you need to enable it through the IAT multiplier too. It is all 0.0 at the low IATs so even if you add timing on the IAT adder table like shown above it won't do anything if the IAT multiplier at those temps is 0.

I changed the multiplier to only add timing for the low IAT's above 5500rpm for now. I've got dyno time scheduled for Wednesday, so I will keep you all posted how it goes. With my base tune I currently have 15* of timing. Above 5500 if IAT's go less than 50F it's adding 3* of timing.
My IAT's are less than 40F by 4000rpm. In the mid 30's around 5000rpm and crept up to 43F at 6500rpm when I was doing pulls in 86F ambient temps. AFR is at 10.5-10.7 on the gasoline scale. 3rd gear is now useless at WOT as it vaporizes the tires around 5000rpm. I stayed in it for a bit until it got too sideways. I think I'm going to tune it on 91 octane and meth with 16oz of Torco. Then just back some timing out of it. Not being able to go wide open in third is just retarded. I'll do a drag radial only tune and a street tires tune.
