Default where should I put the bung for my plx?

From what I can tell it needs to go behind the narrowbands and at an angle meaning not perfectly horizontal? Passenger side or driver side better or behind the x? I don't have cats.

Here is where I placed it with cats on a stock Z06 exhaust. Driver's side can be right at the O2 sensor. I am on a vertical run. If the run is horizontal like LTs, then 10 or 2 is the best place. 6 o'clock would be the worst. Don't go too far downstream as the AFR becomes distorted the farther away you get from the exhaust event. I did driver's side, but no difference if it is on passenger's side, just where you plan on the wiring to run. Driver's worked out better for me. I also did a stock LS3 exhaust, very similar.

If I'm doing it on the car would 8 o'clock be good?

You have to work with the clearances you have, of course; but, anything below 9 & 3 means the tip of the sensor is subjected to more sediments and moisture. Over time the sensor will deteriorate faster, fastest at 6.

I've always used anti-sieze on things threaded into exhaust. Use it sparingly.
