We target 160F on the race car...more is better but sooner or later you have to get the throttle down...

I target 200; it always comes on at 95 or so here in Texas. It takes a bit; when it's ready I really get into it!! At 160 I notice the oil pressure up to 60 or so - based on gauge. I just don't like to see the oil pressure jumpin' really high.

By 160dF the oil is thin enough (18 cSt) to be acting like warmed up oil (10cSt)*, hover the antiwear ingredients in the oil don't start operating to full effect until closer to 200dF. So, at 160dF you can start to "get it on", but don't run the snot out of it until the oil is above 200dF.
[*] at startup (40dF) a 5W-30 or 10W-30 oil will be about 60-70 cSt of kinemetric viscosity.
