I plan on installing a new set of Kooks long tube headers. I don't know wether to install the x pipe with or without cats. If I put in an x pipe without catalytic converters will I get Check Engine light all the time or is there a way around it? Sorry, i'm new at this and don't know the answer. Is it just better to put in high flow cats? Wanted to stay away from that because of the added cost.

You could have the CAT fore and aft sensors shut off with an edit tune. Hi-FLow cats only cost between 3 - 5 hp so you might consider intalling Kooks Hi-flow Cats and X-pipe. That would allow you to keep all your sensors working

You can tune out the light or get a set of O2 sims.

The rear O2's are used to fine tune the LTFT's so I would keep them.
