I recently installed a 160 degree thermostat in my 2007 C6. It did the job in reducing the temperature while the car is moving. (Down to 173 average). However, when the car is stopped the temp raises to 216 or so. Now my big question is will the broad difference in temp cause damage to the engine? Oh, in addition I did add two bottles of Water Wetter as well when I refilled the coolant. Any help or advice would be appreciated.

Where did you get the stat from? I bought one from Mid America which was advertised to work on the LS2, and I had roughly the same problem you did, except I took mine out on some local errands right after the change and my temps were up to almost overheating.
I ended up switching back to my stock stat when I got home, and had my tuner put in the correct 160 when he did the tune.
Put your stock stat back in, and change the oil if you let the engine get overheating hot.
I have a 160 also, and set the fans to come on at 180 and I don't see anything over high 190's in traffic. My car is stock except for a CAI, Exhaust and a "canned" tune.
Corvettes run like that i had an 84 and an 06, and they both would run from 180 degrees to 220. I installed a 180 stat on my car and as soon as i did i got a diablo sport tuner, wich made the fans kick on earlyer, and now just setting idling the temp never gets over 205. Plus the diablo also gave me noticably more power.
You could have some air in the system. Heat it up and let it burp the air out. Or you can do the trick I learned off this forum. With everything cold, pull the water line on the drivers side head. Now, take off the coolant reservoir cap and put your mouth over it and blow. Yes, do not swallow any coolant or you'll die. But it's not that hard. Blow until coolant comes out of the hose your removed. Put the hose back on, fill up the reservoir and you are ready to go.

Reset your fan and you will see cooler running even in stop and go driving.
As everyone said you have to change the fan speed percentage.
There is only one fan in the C6 I dont know why some say fanS.
Anyway, I wish I had a dollar for every newbee that didnt fill out their profile so others know where you are for advice on where to get these and other mods done. If you are in NY I can set the fan speed higher at lower coolant temps. PM if you are near LI NY.
Everyone says to change fan speeds and yes, for optimum performance he should. But even before I reprogrammed the fan speeds my temps ran around 178 to 180 on the freeway and never got above 200 in the city after installing my 160 stat.
