Purchaseing a 2008 with MXO transmission and would like some comments on 2.73 axle Vs standard. Will I noticably see/feel the difference, weekend drive type of vehicle.
Yes. I think you will notice a difference if you drive the two back to back. Since you are getting the automatic, I strongly recommend the 2.73 axle ratio.

Unless you are going to upgrade the gears (3.15s/3.42s etc.) later on anyway, then one might be better off applying that money towards the aftermarket gears/labor.

Glad to hear this, I ordered the "performance" (2.73) gear rario on my A6 transmission equipped Vette I will be receiving in February. I wasn't sure how much it would help, but decided to get it anyway.
I went from the 06 Auto 2.56 set up to the 08 Auto 2.73 setup and with
all of the new changes it is difficult to pinpoint how much improvement
the axle ratio contributed to how fantastic the Vette runs. But from
past experience in other Vettes with the "performance axle" ,it was
a no-brainer. Glad I did it, but it came with the Z51 as part of the package, which was perfect.

For the roughly $300 to order them, no other mod will improve the feel of the car. The hard thing is to pass up installing 3.15s

Does anyone have a side-by-side compare of the 0-60 times for a 2008 2.56 vs. a 2.73?
I have the same dilemma. I am ordering a new 2008 with F55. Since it will be a daily driver, I have no plans to mod it (My C5 gets all of the mods). I drive a lot of miles per year (15-20K) so fuel economy is important to me. The 2.73 is only 6.6% lower than the base 2.56, that's about 100 RPM @ 70MPH. I does not seem the 2.73 will make much difference in either performance or fuel economy. I read the biggest change in feel will be the mid-range, in-gear passing.
There was a much greater difference in the C5 axle option, 2.73 to 3.15 or 15%. I don't think one can compare the performance axle option benefit on the C5 to the C6.
