Use GM part #12617944 for the exhaust gaskets. I know the Kooks C6 headers come with bolts, if you wanted I'm sure you could get more right from them.
As far as tuning goes, you'll need a few codes turned off in order to not have an SES light at the very least. If you do get the vehicle tuned, the tuner should be able to address that. Basically any code associated with 02 sensor, sensor 2 you'll have to turn off, and catatlyst efficiency.
You should be able to re-use the both OEM bolts and gaskets. For the bolts you should buy some "anti-seize" available at auto parts stores and double check on the proper torques specs....I think it's 11 ft.lbs first pass and 17 second pass but I'm not positive. When torquing the bolts you should start at the inside and criss cross your way out. The OEM gaskets work well and can usually be re-used, do not use any sealer or anything else on them.
Some may tell you buy new parts, that always works too, I'm just saying what I and many others have done.
As for the need for tuning, I'll pass this onto someone else.
Second pass is 18 lbs. You can reuse the exhaust gaskets from the factory they are triple layered, compared to the Kooks which is a single sheet gasket which will blow out within a short time. I used the Predator U7194 to go with my off road pipes, very easy as it already has the long tube header tune in it and just couple of clicks and you are good to go.
I would not recommend using anti seize on the header bolts as they will backout real fast and you will be constantly checking the bolts. I dry fit mine and did NOT use a torque wrench as I went on feel of the bolts rather then take a chance of striping the heads. I ran my car for two days and then re-checked the bolts and tightened them and they have not backed out since.
Good luck on your install, run a search as there are tons of information on the install. Kooks are very easy to install.

Instead of re-using, I bought new GM gaskets for $21 bucks, thought that was worth it. I used anti seize with no problems and have had no backout either. I used a torque wrench with no stripping of the heads. Re-checked the bolts after 2 days and after 2 weeks once again using my torque wrench and they needed no tightening at all and again, no stripped heads. The consensus I got on the forums here and other places was to replace the gaskets with new GM ones, use anti seize with a torque wrench.
I have the same set up on my Z51. I used new GM Gaskets and torqued the original gm bolts to 18 ft lbs. I also used antisieze on the bolts and...........Thanks to Mike @ Straighline, he did a great job on a dyno tune!!!!
PS- I will be rechecking the torque of the bolts when I bring the car out in spring!!
