Whats up,TEX! I do a decent burnout(lol) in "S" mode(TC off only,no comp or AH off), don't use paddles if you're much higher than stock HP(trust me...), roll up to the line and just break the second beam(staging light), raise up RPMs to whatever the brakes will hold that particular day(usually 13-1600) and roll into the throttle all the way to WOT by about a car length or so past the lights. I always go an the last yellow because I'm not running full slicks or drs(I'm still on the factory tires, belive it or not) and that helps my reaction time and so far never redlighted. 1.86 60ft is the best I've gotten on the stock tires, but am running consistant 11.4's at 125mph.
To answer your question, yes, in S mode, it'll shift on it's own.

here is what i do
a small burn out just to clean the tires (im on stock runflats) leave it in S mode with traction control off but AH on (just incase) stall up to around 1100 (this seems to work best for me)
so far all of my track runs were in a bone stock 06 A6 and i managed a 12.588 in a +455 DA while spinning thanks to the rain starting
