Be careful, t-stats come either: (1) with a housing, or (2) without a housing. I recently installed a 160 deg. t-stat, and found out the hard way. I have a '07 Z51, that required a t-stat with a housing. Other '07's do not require a housing. Go figure!

I have an 07 Z51 and didn't need a housing I just re-used the factory gasket.
I think that this was one of the changes in the LS1 and LS2 water pumps. I thought that the LS2 changed the T-Stat to the old SBC style T-stat and did not require a housing.
GM sells the gasket and housing as a set, thats why if ya don't get the housing you have to use the old gasket. GM recomends that they be replaced as a set, don't ask me why. I've done it both ways without issues, just make sure the little square notch on the gasket is seated in the little square on the housing, don't ask me how I know that.
