My LS3 with a 4.100 stroke yeilds 427 ci, The LS7 comes with a 4.000 stroke to give it 427 ci. Using a 4.100 stroke in an LS7 gives 440 ci

Ever so slightly better rod ratios on the LS7 I'd guess...Which would translate to an engine that would be safer at higher RPMs...I think the difference would be pretty small, but I guess I could be wrong

Performance wise and dyno charts: You would need to know more than just strokes. Cam size, head work, intake headers , tunning, etc. my LS3 427 made 525rwhp/500rwtq with a somewhat small cam, but had a lot of heads work done to the LS3 heads. There are all kinds of different paramaters to consider. I'm told that a 440 inch LS7 with head work and a small street cam can give as much as 580-600rwhp. for whatever that's worth. Again more info is need.

My buddies 440ci LS7 made 590whp w/ a medium size cam. Get ahold of Vengeance Racing, they built the car.

research engine stroke ratio. In theory, an ls3 should make more low end torque and the ls7 should (well it does) rev higher and make more power up top.
