True, but I think he means why not two entirely separate and

This sounds like jibberish to me. What does it mean?
I think the value of crossconnected pipes is that each exhaust pulse has 2 mufflers to pass through. This allows each to be fairly unrestrictive. Explains why adding aftermarket catbacks doesn't do much for HP gains- the OEM system is alreadt pretty good. A true dual system would have to be more restrictive in order to meet noise requirements.

I wonder if it sounds better? Possibly less popping, and more muscle car sound...

It would take away some power but the sound would change.

I've also read something once about the crossover helping or adding more torque; not sure how true that might be???

Because an X pipe actually increases engine performance. People did true dual back in the 60's when they didn't know any better.

If you have long tube headers, I don't believe you need the H or X connection as the headers are designed to scavenge the exhaust. The H/X acts like a pump to pull exhaust out of the opposite side of the normal exhaust manifolds.

And for the record.............
I did go straight pipes (non-X non-cat) on my last C6 with headers
More burble on decel than any human could handle with no real free of added power on the butt dyno.
