What will some of the "fancy" spark plug wires really do for my performance. Any one done a test on a dyno or anything with and without them? What's wrong with stock plugs and wires?

Nothing.
Aftermarket wires do sometimes look prettier though.

Again, nothing.
The stock wires are fine and remain fine well into the ultra high powered/modified ranges. The stock AC Delco platinum plugs are ok as well but many have found better overall performance/fewer misfires with a good set of copper plugs (ie: NGK TR55) in most naturally aspirated applications.

Don't go by what any one says,
put them on and try them yourself, stock is 7mm wire. example MSD are 8.5 mm
and will allow more current to pass with less resistance and allows a wider gap as this is where the difference is. Example stock gap .040
I run NGK's tr-55 at .059 out of the box . Now S/c'd
I run tr-6 at the .039 out of the box. With-out them I run stock gaps. Have done this on 3 Ls motors and like the result everytime! They make them for a reason.
I have come to the conclusion that if I were to put some meaty wires on my LS3 I'd go with the Callaway wires. For a reasonable price, they seem to be a huge improvement over the stock wires.
