Redline is best, Valvoline works well.
Usually one quart will do

Does that require a drain first? Is it complicated? I just drove a C6 today in which the steering almost didnt feel like power steering. Wonder if the fluid is the problem.

Not exaqctly, the easiest way to do it is the turkey baster method.
you suck out the resorvoir and refil with new. turn the wheels left then right and do it again (suck it out & refill) you do this until you have used up most of the new bottle. and call it good

I use the AMSOIL Synthetic Power Steering Fluid (Product Code PSFCN) in my 02 Z06.

Not sure of the exact quantity, but it isn't much. I've never needed more than one bottle in mine.
