First, thanks for everyone's replies, one of them made me think of something that may have been the problem. Last post I mentioned that I had a Vararam installed and I was seeing water temps of 220-225. Well, I remembered that I saw the installer insert a board behind the shroud to make the cut out. Yes, you guessed it, he LEFT THE BOARD BEHIND THE SHROUD COVERING THE RADIATOR!. Of course I called the installer to let him know that if he couldn't find his "cutting board" it is because I have it in my garage.
Yeah I knew it had to be something else, there's no possible way that a (properly installed) Vararam alone can raise coolant (or oil) temps that much.

I think it is absolutely your fault. Your instructions say to put something behind the shroud to protect it BUT...
Do your instructions say to "Remove it when finished"? Hm..... I rest my case.
