Need to remove an 08 Z06 engine using an engine hoist. Where should I attach the chains on the engine? The back of the engine is under the cowl. I have the front of the engine off and the front of the car
I haven't done this yet, but do you have the intake off? Can you just fab a quick bracket to bolt to the back of the head and have it come forward where the intake would be? Just an idea.

It is possible to pull the motor without removing the intake but it's a LOT easier if you do.
You will however need a engine hoist leveler as I couldn't imagine trying to pull the motor without one. What I usually do is use 2 chains, one bolted to the front of the heads and the other to the back.
You want the front of the engine to tilt up a bit to clear the front cradle and steering rack.
Lift it slow and make sure you got everything disconnected. It's a biotch trying to line up the Torque Tube (Spline) with the clutch when you are reinstalling the motor.
I normally drop out the drive train and then pull the engine out the top.
