What dish will get compression ratio?

What dish will get compression ratio?
I have always wondered but never knew where or who to ask, so I figured it wouldn't hurt to ask your wise fellas on the forums 
What kind of dish pistons will get a compression ratio such as 9.5:1 or 9.0:1? I see most commonly (-8cc dish, -18cc dish, -20cc dish, and -32cc dish). And don't quite know if these have to do with lower cr completely? I would assume these and certain heads would meet the goal? Sorry if i sound a little insane or stupid
But I'm on here to learn as much as I can
so help a guy out?
