Head Gasket Questions..technical help please.

Alright I have most of my 403 stroker build on the way but down to a few smaller but critical decisions.
I am shooting for about 11.5-11.6 static compression to reach just under 8.7 dynamic compression. From what i have gathered these numbers are safe to shoot for. I live in texas and 93 octage is readily available so that should help as well. I am in Dallas Texas with an elevation of 755ft as well, so that thins out the air just a hair, not exactly like Denver but not sea level either.
I have 65cc heads with 4.005" bore and 4.000" stroke. Intake valve closes at 73.5 (intake duration 234).
I am waiting to get the deck height of the pistons once the engine block is measured, so that will determine some things.

Questions
How important is the bore of the head gasket compared to the bore of the cylinder and head. The stock LS2 Head gasket is .020 larger than the stock bore of 4.000"?
Also who makes the best head gasket for something like this. If the deck clearance is ZERO then i may have more options including stock but if it is at around .010 then i would be looking at a thinner aftermarket gasket, like Cometic?
What's the safest Dynamic compression ratio you can ran without worry.

Thinking about this one actually should pretty much be the one i need to get my compression pretty close to 11.4 and dynamic would be 8.48. Might leave a little on the table but rather be safe I think than risk too much compression.
