Does anyone know if it is safe to change my coolant in my 07 c6 to the old green coolant? Does the pink stuff still plug up the radiator and cooling system? last question, what would the advantages be to change other than not plugging the system.

No, I don't believe that it's a simple swap, I think you'd have to carefully flush out the entire system thoroughly, you might even have to change out some hoses and such.

While I too have heard about some cases of thickening/syrupy coolants in the past I still don't think that Dexcool (aka: "the pink stuff" that's actually more like orange stuff ) has been totally confirmed as the culprit there. With proper mixtures and proper maintenance the stuff works very well.
It can be done but isn't recommended. The DexCool issues of the 90's are history. The C6 is designed for DexCool and that's what the general recommendation is, stay with it. Here are a couple discussions for reference.
