Does it affect the engine if you change oil brand (not syn oil, normal oil) each time? I can remember years ago (10-12) I was told that due to the additives that each brand uses that they can affect your o-rings, etc. so best to stay with one brand then if you do change stay with that brand

I don't think it matters as long as it's a quality, name brand oil.
That being said I do happen to stick with the same oil in my C6 but only because it's great stuff.

Years back it was said that oils from the Penn state was more abrasive
. Pensoil being one of them. Another brand was waxy, leaving a sluge coating on parts.
The stock recomended Mobil 1 is fine for this car.. If you want better I would look into Redline, Motul or Amsoil. All of these premium synthetic oils have higher levels of ZDDP.
You can switch between the synthetics, as they are required by law to be interchangeable. However NEVER mix two brands atthe same time; foaming of the oil may occur.
