that plug on the side of the pan is the fill/check level plug. What I did was buy a pump from a boat shop that is used to pump lower unit oil in an outboard engine. It cost about $10 and screws right onto an oil quart. Another thing I did before when I had my c5 was bought a cheap pump up sprayer from the hardware store and cut the tip off so it flowed more volume than with the spray tip. You need to have the trans warm and the engine running when you check it...and level. Good luck. Hope that helps

its very close to the exhaust pipe though, doesn't look like fun

You "can" use Dexron 3 BUT GM no longer uses or recommends it. As of April '05 Dexron 6 is the only thing used and recommended. 6 is backward compatible with 3 so you don't have to worry about doing a complete flush. Just FYI here's a thread from '05 with GM's announcement of the switch:

from reading that link, isn't that for the 06 model 6spd autos??
Technically that's what the bulletin is talking about, yes, starting with the '06's the Dexron-6 became the "factory fill" standard. But at that time 6 became the defacto standard for all GM auto trans, including older ones.
I'm not trying to convince you of anything, just saying 6 is what is now recommended. You can continue to use 3 but it isn't as good. Here are a couple more discussions if you're interested:
