I had about 8K miles without sensors and speeds in excess of 120 at the track. The biggest issue was having to press a button to clear the DIC message.
There seem to be some differences over the years and models of C6; some cars throw the warning more often and may actually limit what you can do with the car, others don't much care.

I have had mine out for 3 years. No issues only have to clear the message on the DIC after driving about 15 miles. Been very close to 200mph with no problems.

I'm not dennis, but...
Some people will train a set of sensors, then put them into some kind of canister that can be pressurized to about 30 psi. Keep it in the car, keep it up to ~30 psi, and the car stays happy.
This is usually done if they have some types of aftermarket wheels that won't allow mounting the sensors.
That works, but I prefer the additional safety of having the sensors working properly.
