Yes you defiantely will, you will gain alot more noise and drone. lol. But in fact you might gain just a few hp at the most, Now a gain is a gain so in the end they all add up but might be better just to get some High flow cats, gain a couple hp and still keep the gas smell from being too bad.

What about headers and leave the rest of the exhaust stock? A friend was telling me he thought about 15hp gain.. but i guess thats not the case. plus the smell.

IMHO, best solution are headers with hi-flow cats & aftermarket exhaust...especially in states with exhaust inspection regulations. I'm running AR headers with their hi-flow cats & Corsa Sport mufflers plus a tune from ECS here in NJ. Again, IMHO, the tune is absolutely necessary to get the best out of an engine or exhaust mod.

you can always rewrite the ecu with the stock tune. I'm usng the Halltech ECT tuner, you'll get the tune with it from Jim Hall. Alternately get a tuner suggested by Tom Wong, then get him to get your tune setup.
Modern exhaust systems are pretty efficient. Time and effort is much better spent elsewhere, as others have suggested. If you ultimately decided to remove them, you can buy direct-fit test pipes that bolt right in place of the converters.
The most I'd do if you don't live in CA is remove the extra cats added in 2012 to meet CA emissions, by replacing the catted X-pipe with a 2011 one. But no so much for extra HP, but the extra damn heat under the center tunnel. Engine is very clean with the regular cats, and that's how the LS3 was tuned for.
