Why are you changing? Lower thermostat is pointless unless you do a tune. No benefit at all.
Stock tune allows advanced timing with coolant temperatures below 187°, by keeping coolant temps low you gain power even without a tune.
The stock tune constantly moniters coolant temp and intake air temp and adjusts the timing to get the highest timing advance (power) without pre-ignition.

And how often does your temps stay under 180?
Mine generally runs between 185 and 190 for the most part and during the summer closer to 190 or higher, so really, unless you change your fan settings I don't see a point.

True.
Our cars run 172-176* cruising which is right where i like it
Thermostat will open sooner sitting in line at strip so engine will stay below opening temp of stock thermostat longer before timing is pulled, if you time it right no timing is pulled before you make your run!
When I put a 160° thermostat in my Z06 it made no difference unless cruising above 20-30 mph as the fan didn't come on until 204° and then it came on for only 15%. So sitting in the staging lanes the temp still went to 215-220. Got a tuner and changed the fan settings. Now runs 175 cruising and 195 idling.
