I just did mine. I didn't pull the mufflers, but I disconnected the exhaust from the headers and took that section of the exhaust off the vehicle. I left the mufflers in place.
One thing that you'll find out is that if you don't remove/disconnect the leaf spring, it will be almost impossible to pry the cradle down far enough to remove the trans mounts. It will save you time and frustration to just plan on disconnecting some of the rear suspension components to allow the leaf spring to relax and drop the rear cradle.
I don't know if it is true or not, but I read on the forum at one time, that if you do the trans mount and not the engine mounts, or engine mounts and not trans mounts, it can lead to an issue with h driveline because of different flex rates. No clue if the claim is valid or not.
It may be a bigger issue since you have a 2005 since the hsve the weaker diff than 2006 and up.
