I know I am not the only one running 285/30/19 up front and 345/30/20 out back. And a lot of them are not having this issue. My issue of going bigger up front is that I will rub to much because I rub as it is.

Something isn't right. Wheel size/wheel offset or tire size must be other than stock. Or other than what you've stated.
I don't understand how you could rub the front of the wheel well. The side of the wheelwell from too wide a tire or the wrong offset, OK. The top of the wheelwell because the car is lowered too much, maybe.
A widebody conversion using stock GS or Z06wheels and tires under GS or Z06 fenders will not rub. If you are using aftermarket wheels you'd better check the offset. You aren't running wheel spacers, are you?
Stock ZR1 looks but are they OEM stock or aftermarket ZR1 style? You've been in so many buy/sell wheel threads that I can't tell what you're using. You were also questioning spacers, did you ever buy/use them on the fronts? In December you were looking for 18X10 & 19X12and looking for spacers.
Check the front wheels to see what offset they are, should be stamped on the back, should also have the size and a GM stamp.
If the sizes you posted before are correct you are 4.8% larger diameter than stock in the back and need to bring the front tires up to the same 4.8% larger diameter than stock.
all those questions were were when i was attempting to reuse my wheels that were on my car prior to the wide body install. I later found out that I would need spacers that would be way to large and not safe. I bought a set of the of the 20x12 with i believe an offset of 36mm and later bought a set of fronts with an offset of I think 56mm 19x10

"I think" offsets won't solve your problem. Pull a wheel and check it.
I didn't search but have some old notes on ZR1 wheels;
Front 285/30/19 with 40mm offset.
Rear 345/25/20 with 59mm offset.
Check your wheels for offset---NO guesswork! Then buy either front tires to fit your wheels in the correct diameter or replace the front wheels with ones with the correct offset and replace the tires.
what about tpms are you still running them in your new tires?
Yes I am, and haljensen the tire size was not the problem. When my exhaust was installed the idiots at the shop didnt make sure that the rear O2 sensors were safe from the exhaust heat and they melted causing a short. I bandaged them up and moved them up out of the way and no more sensors being tripped.
