As I get closer to pulling the trigger on a set of long tube headers, a friend of mine warned me about running no cats.
On his C6, he first ran no cats. he said the car constantly had a running rich smell, that was inside the car and out. Reminded him of back in the day when we drove our old muscle cars out and we all came back home smelling like exhaust. He said that issue went away when he installed cats.
Noise level is not an issue I am worried about, but I dont want to be smelling exhaust from the vette. Is this an issue with everyone else?
Some will tell you they've never noticed a different smell with no cats. But just as I notice when someone is smoking on the other side of the restaurant, I noticed the no cat smell on my C6 when I was stopped at stoplights. Had to get rid of it, so I had cats welded into my header X pipe after the fact (more expensive and difficult that way). There is maybe a 5 rwhp diff by eliminating cats, which should have no appreciable effect on performance, so I'm a big fan of catted headers now.
The LG catted headers come with off road pipes as well, allowing you to try out both setups.

I ran without cats for about a 2 weeks before I had a set of magnaflow high flow cats welded in. I did notice a slight diff in the smell and it helped quiet the drone down some.
go with cats...
high flow cats (at least the ones I have from Pfadt) will still let a good bit of smell by. I personally like it, but any more and I think I would get annoyed.
