I am trying to decide which clutch to go with Stock Ls7 /Monster/or the Mantic. Car is a 05 with fast 102 and Ls7 exhaust and C.O.W boosted and tuned so car is not putting down 500 hp. just want something that will last, I will be installing myself and only want to do this once. also a daily driver so I would like something easy to drive but something you can drive hard on the occasional track time.

Well, you want something that will last, daily driver and occasional track time.
Organic clutch material last the longest and has less tendency to chatter. However, not the best for the track. The LS7 clutch is great for a daily driver. The Mantic ER2 is best for street/track. The Monster I have no experience with so I will let someone else respond.
Define occasional track time. Once a month, once a week? If you go to the track at least once a month, then I would go with the Mantic ER2. If only a few times a year, then the LS7 clutch would suit your needs.
Since I do not track my car, I am running a Mantic organic dual disc on my S/C LS3. It feels like stock with a lot more clamping power. Follow the proper break-in period for any clutch for a long lasting, chatter free clutch.

The Monster LT1-S is what I would recommend for what you have. It will have the longest life of any single disc, or twin disc. It will drive and feel like stock, but it is rated at 700WHP/TQ, and can take the abuse of track events.
