Very expensive and time consuming swap. Even if you purchase a wrecked donor car for parts, labor would be a killer. Best to sell auto car and purchase a manual.

I did the swap on a C5 and it was pretty straightforward...
The mechanical portion (remove old flex plate, auto trans, torque tube and differential as a unit and replace with flywheel, manual trans, torque tube and differential as a unit) was relatively hassle-free, just a hole had to be cut in the firewall for the clutch rod and the clutch pedal slipped in to the existing pedal assembly under the dash. You can bleed the clutch system by yourself, but it really sucks to do it that way. If you're thinking of installing a remote bleeder tube - now is the time!
The key to this is get the SAME transmission wiring harness for your vehicle year and options, but from a manual shift version of your car. I didn't know better and spent as much trying to re-wire the wrong wiring harness to make it work as I did doing the rest of the swap!
You can drive it "untuned" - however you'll always have the engine light on. The ECM is looking for sensors that are no longer there. Find someone with a Tech II Scanner to look up a VIN from a vehicle from the same year and has the identical options as your car does (but a manual shift version) and re-flash your unit with that data.
Parts were something like $1500 delivered from a wrecked unit - plus fluids and a new pilot bearing and some odds and ends. You should be able to recoup this by selling your old auto trans and parts... If you are thinking of upgrading to a 3.90 or 4.10 now is the time while everything is laying on your garage floor - if you do it later (like I did), you're in for almost as much work all over again!
Just about everyone said "sell your car and buy one with a stick" - I'm glad I went the route I did, I felt like I was driving a brand new car all over again!

If it wasn't so much of a hassle, I might trade parts with you. Lol! Driving a stick is more fun, but the auto is quicker. Since you haven't purchased it already and really want a manual, I'd recommend you just keep looking.
