Header bolts and gaskets
I'm gonna be installing a set of kooks headers in the next few weeks. I'm planning on getting new gaskets and bolts from Chevy. Also gonna get some heat tape and spark plug boots just ti be safe. Anything else I should get that would be useful for the install that I might be missing? Do most people replace the bolts or use the old ones? If use the old ones, what should I apply to them (antyiseize/locktite)?

Anti seize on bolts and Spark plugs. From a forum vendor W/Kooks came these header bolts.

Maybe some anti seize on the bolts for the long tubes.

Just clean the threads if anything. If you are getting new gm bolts they have some thread sealant on them.
If you have a manual, do something to keep the clutch line away.

Yeah I have manual. Do something to keep the clutch line out of the way during install, or after it's all done? Do you need to tuck it away somewhere or wrap it in heat tape?

I like the ARP studs. You can hang the headers when you install them ans it makes it a bit easier. I also use heat socks.

I used the stage 8 bolts that came with the kit, and some OEM gaskets as the Kooks ones looked like crap.
Also I used MSD wires as they were easier to bend. No heat boots on mine, and they have been fine for the past 5000 miles or so.

Do you have the pull off the spark plug wire to slide the boots over? I read that the boots can be pretty tough to pull off ad sometimes they break

Yes, but it really wasn't a big deal. Just make sure you use dialectic grease on the boots and everything works fine.
