My LS3 runs a tad cooler oil cruising at 70 mph 225*+ a bit. This is with 4:10 differential too.
I have seen 235* when in 100+* weather and driving 100 miles per hour for extended time.
It take me at least 30 minutes driving at highway speeds to get oil temp to stabilize. This is just normal driving no heavy footing.

Once mine is warmed up the oil temp always runs higher than the coolant, and I have the Z-51 package which includes an external oil cooler. Don't know how much help the oil cooler is but as I recall it runs about 215 degrees. I guess this is why GM recommends the Mobil 1 synthetic.
