Get jacking pucks, and most any floor jack will work. I got tired of the floor jack method and decided to purchase a QuickJack still need to use the pucks, but it lifts car up to 18-20inches off ground. I still use jack stands for safety as whatever man makes god will brake.....safety first.
Nothing wrong with AC Delco rotors & pads for the type of driving you're doing. Did a full 4-wheel rebuild on my '05 Z51 last year & the AC Delco set up is fine. As for a floor jack, check out Harbor Freight....they have good low profile jacks from around $60 to $200 bucks. Main differences will be "reach" & full jacking height. Just keep in mind you want a "low profile" type.
