Default Bad Temp Sensor or Gauge?

Seems like my car runs at different temps all the time. I mean drastic differences, like one minute 190* driving on highway, stop for gas then 230* on same highway and won't cool down? Outside temp is 70* and I have a 160* thermostat, so not sure if I have a bad gauge or bad sensor. I'm thinking maybe I have a bad sensor? Anybody know where I can find the sensor that reports to the gauge in the dash? or if you have other ideas for me to check, I appreciate your knowledge and help. Thank you.

If you have a scanner that reads live data then you can check that against the gauge. It may be a little off, but once the car is warmed up they should be pretty close.

Temp sensor is in the driver's side head:

Why do you think the gauge is wrong and the car is not actually running hot?

Thanks for the info guys. I suppose the car could be running hot but why would it run at 230* driving on highway in 70* weather? It has always(Since new) ran around 210 from factory, I changed the thermo to 160 and its runs cooler for longer than once it heats up above 200 it goes right to 230? Maybe I have air trapped in the system? or maybe I have a bad (sticking) thermostat?

Update, I checked the sender connection, it was good. I replaced my thermostat with a 180*. I found some air trapped in system, upper hose and the thermo was not working properly. Drove the car for 2 hours and it stayed right at 180* so problem fixed. Just wanted to give anyone reading this the solution to my issue. Thanks.
